something I’ve talked about on here a few times is a paranormal podcast that I listen to regularly that’s very hit and miss where quality is concerned. when it’s good, it’s great. when it’s bad… it’s rough.
but two reoccurring issues with it just get under my skin so much
The guy who hosts it, for lack of a better term, is a “california skeptic”. meaning, you can tell he’s from a west coast US background, where new age spirituality is way more normalized than it is on the other side of this country. for one, it’s a bias that screws with your discernment with this stuff. it also sticks out in a distracting way to me so much. I’m an east coastie and, like, if you open up a salt lounge over here, I’m getting an incoming call from everyone ive ever met in my life who wants to trash talk how stupid they think it is. even my grandma wants to reiterate “rocks don’t have special powers”.
there have been like several episodes so far where some (usually white) doofus is like “I have ghosts and shit in my house. Time to bother my indigenous coworker about it because maybe they know a medicine man or whatever.” that’s so unhinged. like if I went up to my coworker and was like “hey. you’re from New Mexico. you’re Navajo. I have a bit of a pest control problem, except with demons. care to give me an exorcist’s business card? I’ll spot them for the plane ticket.” I don’t think any jury in the world would convict her if she slapped me lol. it’s noble savage bs and I hate not seeing pushback on it.
hey, don’t cry. one cup heavy whipping cream, two tablespoons granulated sugar, three tablespoons cocoa powder and whisk until stiff peaks form for three ingredient chocolate mousse, okay?
For the “That’s not mousse that’s chocolate whipped cream” folks in the notes:
1 - “mousse” just means foam. It’s a stabilized foam. It doesn’t require eggs or melted chocolate to be a mousse.
2 - do you know what five tablespoons looks like compared to one cup?
5tbsp on the left, 1c center, 2tbsp on the right. I used 2tbsp sugar for comparison because some people use that amount of sugar to make whipped cream (that seems like too much to me, I generally use about 2 teaspoons per cup of cream but I wanted this to be the fairest comparison possible). You are increasing the volume of ingredients in the recipe by nearly half. The resulting food does not act like whipped cream.
Let’s do a food science.
The whipped cream I made here is one cup of heavy cream, two tablespoons of granulated sugar, half a teaspoon of strawberry extract and one drop of red food coloring. The mousse is as described in the recipe.
In order to be as fair as possible, these were both made in shallow bowls (I didn’t have two clean deep bowls). They were whipped with the whisk attachment for my immersion blender. The strawberry was whisked on high the whole time, the chocolate was on low for the first minute so that it wouldn’t spray cocoa powder around my kitchen from the shallow bowl.
They were then chilled for 40 minutes.
I am testing how well they each hold their form at different temperatures. One plate (fridge) was chilled for 30 minutes and will be kept in the fridge. The other (counter) is in my 71f kitchen away from heat sources.
After ten minutes I got a clever idea, and added some load to the structure.
I’ll be checking them periodically to see how well they maintain their form over time, and I have a separate experiment on the stability of the whipped cream vs the mousse chilling in the fridge.

Well im happy to report that Marlene Dietrich was in open opposition to the Nazi regime, and in 1937 donated her entire salary for a film (over 9 million dollars in todays money) to helping Jewish refugees :)
This is a BONUS ROUND in a tournament to determine the best hourly tune. Both of these tracks lost in round 1 against the other two 2 AM tracks, and this is just a fun extra round to see how they would fare against each other :)
